English born chef Paul Lewis’ Lewis began his career at the age of 11 when he worked at the Michelin Red M rated Royal Oak hotel in the village of Yattendon. He honed his craft while working under the famed “Great British Chef” Richard Smith at the Beetle & Wedge Hotel on the river Thames. In 1998 Lewis jumped the pond & moved to Houston to work with renowned chef Tim Keating at the Four Seasons Hotel.

Lewis spent 9 years working for the Four Seasons brand & was involved in the openings of hotel restaurant startups in Dublin, Dallas, London & Hawaii.
