Jesus Hernandez of Manuel’s restaurant first learned about cooking from his mother and grandmother in Luvianos, Mexico State. Growing up in a large family, there was always an interest in preparing great meals for everyone to enjoy and share together. Jesus’s family had a dairy farm, so he learned to make several kinds of cheese and yogurt.
As a young man, Jesus came to work at Manuel’s restaurant in Austin, Texas in 1998.
He trained for several years with owners Greg Koury and Ahmad Modoni, learning about recipes from Oaxaca, and many other regions of Mexico. He worked alongside experienced cooks in our kitchens who have spent their entire lives cooking, including Executive Chef Francisco Cortez. As his knowledge of taste and ingredients grew, he developed and improved his skills and talents. Today he is a seasoned Chef and Manager at Manuel’s restaurants.
